Hills Kitchen SPECIAL DIETARY ACCOMMODATIONS

Our views on your relationship with food are simple. Healthy eating is simply a LIFESTYLE choice. The focus here is lower sodium, lower fat, lower calorie, fresh whole foods. Moderation/portion control are considered in all of your daily choices. A healthy diet provides the body with essential nutrition: fluid, macronutrients such as protein, micronutrients such as vitamins, and adequate fiber and food energy. Food is our fuel and does not need to be viewed as boring, a burden or evil. Work to make choices every single day for your lifetime rather than quick, severe and unrealistic diets.

Diabetic Diet

Diabetes success is dependent on controlling your blood sugar (glucose) levels. Adherence to diabetic protocol reduces risk of secondary conditions such as hypertension, cardiac disease, nerve related debilitation, or kidney disease. This is achieved through portion control, regular meal times, foods naturally rich in nutrients, low fat, and low calorie foods. Foods to avoid/limit would be those with: added refined sugars, starch (ie rice, pasta) , high glycemic food.

Celiac Diet

This is an autoimmune disease that causes damage to the small intestine as a result of the consumption of gluten. The damage can result in the inability for the body to absorb nutrients, resulting in severe malnutrition and a host of other issues. Gluten avoidance includes those foods with: wheat, barley, rye and any derivatives of these grains, including malt and brewers yeast. Any foods that do not contain these ingredients can still be enjoyed. These include: fruits, vegetables, fish, poultry, meats, beans, legumes, and most dairy products. Special consideration for true Celiac Patients will be taken (ie-new gloves, surfaces cleaned to ensure no cross contamination of gluten)

Elimination Dietary Protocol Testing

When eliminating food or food groups believed to cause possible adverse reactions. This is done for a period of time and then those foods or food groups are reintroduced to determine if the symptoms return.

Renal Diet (Kidney)

While in various stages of renal disease, your diet is top priority to maintain kidney function and avoid progression of the disease. Those on this diet need to avoid sodium (salt) in their diets. They also need to avoid high potassium or phosphorus rich foods.

Cardiac Diet (DASH Diet)

This diet requires low sodium and low fat foods. The goal is to avoid foods that would affect blood pressure and increase stress on heart function. This diet includes fresh fruits and vegetables, whole grains, lean proteins (ie-poultry, fish, legumes). Avoidance of added/high salt, additional sugars, and trans fats (grease, bad fats, fried items) are crucial.

Gluten Free

This is considered to be a non celiac sensitivity/intolerance to gluten. Those with gluten sensitivity do not experience damage to the intestinal tract like Celiac patients. Generally, a gluten free diet results in persons feeling reduction of symptoms such as bloating, abdominal pain, fatigue, headaches.

Keto Diet:

This is a diet that is low carb and high fat. Generally, this involves drastically reducing carb consumption and replacing it with high fat. This puts your metabolism into a state of ketosis where it then converts the stored fat in your body into energy. Macros would be 75% fats and 20% protein and 5% carbs daily. Eat protein, eat healthy fats, and eat green vegetables.

Vegetarian Diet

This diet is comprised of fruits, veggies, legumes, grains, healthy fats, and plant based proteins. All meats, poultry, and fish are avoided. Some people choose to eliminate dairy from their diet as well. We have plenty of ways to customize dishes to fit within these choices.

Low Carb/ Carblite

This is simply general healthy eating while limiting carb intake that is primarily found in sugary foods (i.e. pastas and breads). The focus is on protein rich whole foods and veggies.
